Gata is one of the most famous confectionery products of Armenian cuisine, which is based on a puff pastry. Quite simple, in preparation but very tasty Gata will be a good addition to a cup of delightful coffee or tea.

Ingredients:

Dough:5

  • all-purpose flour – 3 cups
  • butter – 1 1/2 stick or 2/3 cup
  • yogurt or buttermilk or kefir – 1 cup
  • baking soda – 1 teaspoon
  • eggs – 2

Filling:

  • sugar – 1 cup
  • all-purpose flour – 1 cup
  • unsalted butter – 1 1/2 stick or 2/3 cup

Preparation:

  1. Pour flour into a large bowl, grate batter on a large grater into it, or cut with a knife.
  2. Add baking soda to yogurt, mix and pour it into the flour with butter, add eggs and mix the dough.
  3. Divide the dough into three equal pieces and put in the fridge for an hour.

Filling.

  1. Pour flour and sugar into a large bowl, grate batter on a large grater into it, or cut with a knife.
  2. Rub the sugar, butter, and flour into small pieces.

Forming.

  1. Take from the refrigerator one piece of dough and roll it into a thin rectangle.
  2. Cover the rectangle evenly with 1/3 of filling.
  3. Wrap the rectangle with filling in the form of a long roll.
  4. Cover the roll with egg, sprinkle with the filling and divide into small 1-2 inch pieces.
  5. Do the same with the other two pieces of dough.
  6. Preheat oven to 375 degrees, bake 25 – 30 minutes until golden brown.
